Since October, there is only one ingredient in the kitchen that reigns supreme for many months: pumpkin! Being a very versatile item, it’s possible to really make any recipe with pumpkin, from sourdough to pasta and even desserts!

But today we want to teach you how to make a very simple and tasty pumpkin soup that will be your favorite dish for this fall season. There are different types of pumpkins, from the wateriest to the flouriest suitable for the preparation of gnocchi for example, for the velouté just choose the one you like the most. Also, what better way to prepare a Halloween with the colors and taste of orange?

Cream Of Pumpkin

Ingredients:

500g Pumpkin 1 250g potato 2 stalks of celery 2 carrots 1 small rosemary onion Water to taste

Method:

The secret to great pumpkin soup obviously lies in the vegetables and the type of pumpkin you choose. Cut the pumpkin and the rest of the vegetables into not too large pieces, then in a high-sided pot, heat a generous drizzle of olive oil and color a clove of garlic with a sprig of rosemary. Once the oil is hot, add all the vegetables and let them brown for about 5 minutes, until they are golden brown and have formed a crispy crust. At this point remove the garlic, which will have released all its aroma and flavor inside the oil, but keep the rosemary and fill the pot with cold water to cover all the vegetables, and put a lid on it . Keep the flame on until the water comes to a boil, then turn it down a bit and forget the pot on the heat until the vegetables are cooked and have released all their flavors and vitamins into the water . When you’re satisfied with the consistency of your vegetables, consider removing the sprig of rosemary, after which you’re ready to arm yourself with an immersion blender to blend everything together and bring your delicious pumpkin soup to life. Cut into cubes, the size you prefer, slices of bread and place them in a bowl. Add a little olive oil and a little salt, then cook your croutons using even the grill function of the oven at 180 degrees for a few minutes. What would pumpkin soup be without croutons?
