Eggs are a food appreciated by many, they can be defined as a basic ingredient for almost all Italian dishes. They are very versatile, which is why they can be eaten both raw and cooked and the most common on the market are undoubtedly those of hen, although in some cases you can also find ostrich, duck, quail or goose. Eggs come not only from land animals, but also from fish, in fact, bottarga, caviar and many other eggs can be found on the tables.

Eggs are excellent nutrients, they are able to provide our body with many nutrients and proteins, which contain essential amino acids for humans. Moreover, they are rich in minerals and vitamins like folic acid, vitamin A, vitamin B6, vitamin B12, potassium, phosphorus, calcium and even iron. Do not forget, when you get to the supermarket, to choose the right eggs in order to avoid unpleasant consequences.

Being of animal origin, the eggs could be contaminated by various bacteria. The latter could cause a particular pathology, called salmonellosis, which is a disease that results from contact with animal feces. In this specific case, the bacteria could settle on the shell. Precisely for this reason it will be essential to try never to contaminate the inside of the egg with the outside. Therefore, to avoid infections and unpleasant consequences, some believe that rinsing the eggs is the easiest solution.

In reality, however, this is not the case, because a kind of protective film naturally forms from the shell of the egg which comes off after washing. So the best way to clean an egg, in case it gets dirty, is to simply wipe it down with a damp cloth. The first attention, however, must be made at the time of purchase, in fact inside supermarkets it is important to know how to choose the right packaging, in order to avoid any “damage”. In addition, the temperatures inside these stores are almost always different from those outside.

Precisely for this reason it is not recommended to buy the eggs that we find placed inside refrigerators, since once taken out of the refrigerator, in contact with the outside temperature, the sudden change in temperature could promote bacterial formation. The possibility of storing them in the refrigerator must be evaluated once they return home, precisely, it is advisable to store them in the refrigerator, in the upper part where the temperature is not very high. Pay attention to the different dates on the label, especially if you want to eat the egg raw it is advisable to eat it no later than 9 days from the date of laying.
